Vigor
No matter what build you play, Vigor will be a universally useful stat. I highly recommend leveling up as early as possible as it will greatly increase your survivability. Many early bosses like Margit, Rennala, and Godrick can one or two hit you if your Vigor is low. Damage doesn't scale very well initially, so you don't need to increase Strength, Dexterity, Intelligence, or Faith much outside of reaching the prerequisite stats for a weapon or spell you actually want to use.
Therefore, your priority should be Vigor, which allows you to die less and benefit more from the damage reduction feature of your armor. An exception to this would be caster builds, which deal ranged damage and focus on staying away from bosses. If you're playing one of these builds that focus on Glintstone Sorceries, Vigor won't be that much of a concern. However, any melee or semi-melee build will love high Vitality as it allows you to make more mistakes before learning the boss's pattern.
Damage Stats (Strength, Dexterity, Intelligence and Faith)
Your second priority should be your damage stats, such as Strength and Dexterity for weapons, Intelligence for spells, and Faith for spells. First, I recommend trying to increase these to meet the prerequisites for specific weapons and spells you want to try. Then, if these suit you, you can feel comfortable increasing those stats to fit that weapon or spell. However, Elden Ring allows you to go full spellcasting stats like Intelligence or Faith and still wield weapons effectively by adding affinities via Ashes of War or Whetblades. Fire and Divine affinities ensure that you only need Faith for weapon damage, and Magic does the same for Intelligence.
Stamina and Mind
These two are interchangeable depending on your play style. If you're using weapons, armor, and blocking with shields, Toughness should be your third priority after reaching the prerequisites for weapons and buffing them up a bit. Increases how many attacks and rolls you can do and how many blocks you can do before retreating. Additionally, it allows you to wear shields with better armor and more Guard Boosts so you can block better.
